Chef Jesse Houston and his Saltine restaurant are featured in Garden & Gun.

Saltine chef/owner Jesse Houston is gaining steam on the magazine racks, in a Garden & Gun feature on his take on the classic hot quail.

The story highlights Houston’s wish for something beyond “a throwaway chicken dish” for a non-seafood option at his oyster bar and restaurant, his inspiration by way of Nashville and the tie-in to Mississippi’s hunting culture.

It’s Houston’s second score on that front in mere weeks. The Jackson oyster bar and seafood restaurant was listed in January’s Southern Living as one of “The 10 Best Oyster Houses in the South,” praised for creative twists on Southern classics and wide range of oyster offerings. The magazine had also placed Saltine among a dozen best new restaurants to watch.

Saltine is located at 622 Duling Ave., suite 201, in the former Duling School building in Jackson’s Fondren district.
