Craig's oyster stew
Chef Jesse Houston is somewhat of an oyster aficionado — so much so that his restaurantSaltine in Jackson, Miss., pays homage to the bivalve that's often served on the simple cracker. His homey oyster stew is the perfect comfort dish for any mollusk enthusiast, and made with dry vermouth and 'oyster liquor' (the juice from inside the oyster shell), then dressed, simply, with lemon, a touch of sea salt and Tabasco.
