Saltine in Jackson, Miss.
Last week, chef Jesse Houston's Saltine opened in a former school, which he hopes will revive the local oyster scene in Jackson, Miss. Houston has spent the last seven years becoming an oyster expert to return to the city and put his knowledge to use. Cleverly named after the cracker used to eat the oyster on, the oyster bar presents a classic southern style with an emphasis on fresh seafood and vegetables. Oysters from the Gulf of Mexico, the east and west coasts, and Canada can be eaten raw, smoked, wood-fired and fried, and can be paired with a beer made with oyster shells. Other fish and shellfish share the menu with unique tastes like shrimp toast and seafood sausage, crispy salmon cracklins and skillet cornbread. Custom-infused drafts will be made on site, and a cocktail and wine menu are to come.
